Town of Reading <br />a <br />a Meeting Minutes <br />TOWN CLERK <br />Board - Committee - Commission - Council: READING, MASS. <br />Board of Health Bit FEB 22 P 3, 241 <br />Date: 2015 -08 -19 Time: 630 PM <br />Building: Reading Town Hall Location: Berger Room <br />Address: 16 Lowell Street <br />Purpose: General Business Session: General Session <br />Attendees: Members - Present: <br />Andrew Friedmann, Nancy Docktor, Elizabeth Shurland <br />Members - Not Present: <br />Others Present: <br />Greg Erickson, Donna Pierce, Joan Vitale, Staff, John Feudo, Community <br />Services Director, Robert Lee, Wong Yee Kan, Shang Han Lu, Mandarin <br />Reading <br />Minutes Respectfully Submitted By: Darlene Foley <br />Topics of Discussion: <br />Board of Health meeting came to order at 6:30 pm on August 19, 2015 in the Berger Room <br />of Reading Town Hall. <br />Mandarin Reading <br />Friedmann stated the reason for requesting Mandarin Reading's attendance was to address <br />repeated critical violations or face suspension of their license to operate for a period of time. <br />Vitale stated that Mandarin needs to implement a plan where the kitchen activity can be <br />monitored for proper hygienic practices, hot and cold holding temperatures, proper food <br />storage to prevent cross contamination, testing of sanitizer strength and testing sanitizing <br />temperatures for the dishwasher. Robert Lee understood and said they take these Issues <br />very seriously. Following the inspection of July 10, they hired J.S. Consulting Associates as <br />a food consultant who provided training for 27 members of the kitchen and dining room <br />staff on July 16, 2015. The three hour program was conducted in Mandarin /Cantonese. <br />Shang Lu, their sushi chef, has been promoted and will be in charge of the kitchen to closely <br />monitor dally activities. He is trained as a certified food manager and has allergen training <br />as well. A master plan has been implemented that indicates what, how, when and who will <br />be cleaning, holding the staff accountable. Lee stated they would adopt any other <br />suggestions recommended by the Board. Friedmann recommended having the consultant <br />return unannounced to evaluate during the busy period. Erickson suggested inspections be <br />performed in a different time frame. Vitale will return in September for follow up and will <br />continue every 2 to 3 months to assess if improvements have been made. <br />Health Agent <br />Friedmann announced that Steven DILauro has accepted the position of Health Agent and <br />will start August 31� . Erickson will stay on for a couple weeks during the transition. <br />Page I 1 <br />
